Cambodian cookery class

After sampling some lovely food in the country, especially pumpkin curry and fish amok, we enrolled in a cookery class. We visited the market en mass with our teacher, identifying local ingredients, and buying what we needed for the day’s recipes. Then we headed back to a cool, shaded rooftop terrace to cook up the food.

The class itself was a bit slapdash compared to others, but the flavours were fantastic, and we can’t wait to try to replicate these at home.

We made:
Crispy spring rolls with peanut sauce
Sweet chilli sauce
Fish Amok in banana leaf boats
Banana flower leaf and chicken spicy salad
Cambodian dessert of mango and coconut rice
